Why do u think artists rarely use symmetrical balance in their work what are some other ways artists can create a visually appealing composition

Well artists tend to make art that is important to them, and all of them have different art styles and preferences. Also it is difficult to perfectly make a symmetrically balanced piece of artwork. By using different styles and contrasting colors, or at that just looks complex and interesting to the viewer you can draw them in. Another way would be to create an artwork that can touch many different people emotionally. Overall art can be many different things to many different people.
