1) Once the clay is dry you seal it in a proper storage container, and make sure that air can't reach the clay and dry it a second time.  In 6th grade, we used plastic cover (whatever it's called xD) for this process.  Anyways, you can simply place your clay in a sealed container once it has hardened or you can roll it into coils and place your coils into plastic wrap or sealed plastic bags.

2) Bisque firing is when it's (the clay) fired and has no chemically bonded water left in it.  

Bisque is to fire the clay for the first time

JSYK this stage is sometimes called "biscuit" or "bisc"
