Specialized cells differ from one another because they "only express one gene." In the body, the DNA is the exact same in each cell. However, the gene expression in these cells are completely different. Each specialized cell has a certain function they will perform.

Due to the gene expression mechanism, specialized cells differ from one another.

The term specialized cells refers to the type of cell with particular structure and is involved in performing one particular function. They are shaped according to the functions performed by them. They differ from one another because they only express certain genes which are involved in formation of particular organ to perform the function assigned to it.  

For example, heart cell and muscle cells are examples of specialized cell. When we look at the structure as well as the function of these cells they differ. It is because of the role played by these cells in the body.
