During an experiment, which factors are observed and measured

During an experiment the factors we observe are 
1) what reactions are taking place(if any)
2) is there a change in the colour of the substances used
and so on. Observation totally depends on the experiment
the things we measure are weight, mass, time, temperature,etc.
