Because of higher unsaturation, these fatty acids are liquid in both normal room temperature and in refrigerator. Such unsaturation also make them unfit for cooking purposes. Sunflower oil, Soyabean oil and Flaxseed oil are examples of polyunsaturated fatty acids.
