this was confusing for me to remember but just think of it like the atoms hating electrons so when the number of electrons is more than the number of protons then they make it a negative charge cause they hate electrons but they like protons so they make it a positive charge

but thats really cheesy so one simple thing you can remember is

p+ (protons have positive charge) and e- (electrons have negative charge)

more protons than electrons=+ (positive) charge

more electrons than protons= - (negative) charge
