Excerpt from How to Make Minestrone

2 This soup originated in Italy during a time when the country was divided into many small kingdoms at war. Because of this, travel was often dangerous. Peasants barred their doors at dark in fear of unfriendly visitors. Inns were few and far between. This led travelers to depend on monasteries—houses for persons who took religious vows—for food and lodging. Since the monks who lived there didn’t have money, they needed a way to feed their visitors. Each morning they prepared a thick vegetable soup using whatever was fresh from their garden. They fed the soup to the hungry travelers that arrived at their door each evening. They never refused anyone a meal or a place to stay. It makes sense, then, that the word minestrone comes from the Latin word minestrare, which means to serve or dish up.
