The defintion of a metaphor is a figure of speech in which a word or phrase is applied that is not literal.  So for example he metaphorically refers to Laura by using religious words, such as "smiling angel's glance" or "pardisal dance".  

He then also uses "grains of dust" as a metaphor because she literally didn't turn into grains of dust.    

Since she is dead, he may be using religious metaphors to maybe escalate her into a higher being, or something that is unattainable now that she is dead.  It's possible that  the real Laura was also married to a Count, which also makes her unattainable.
