250 word summary: This article provides tons of information about what is expected to be done in a workplace involving the production or cooking of food by the FDA. This document is also a “revision of the third edition of a guidance document” that contains questions and answers relating to food allergens, including questions and answers about the “Food Allergen Labeling and Consumer Protection Act.” This document also presents information on the Food Allergen Labeling and Consumer Protection Act of 2004. The FDA has made tons of rules on how/what food packages should be prepared, as an example All packaged foods regulated under the Federal Food, Drug, and Cosmetic Act that are labeled on or after January 1, 2006, must comply with FALCPA's food allergen labeling requirements. These labeling requirements were to provide easy access information to people with food allergies such as a peanut allergy. The article also provides information on major food allergens (milk, egg, fish, Crustacean, shellfish, tree nuts, wheat, peanuts, soybeans). This passage also covers the penalties for failing to comply with FALCPA, which is “A company, and its management may be subject to civil sanctions, criminal penalties, or both under the Federal Food, Drug, and Cosmetic Act.” Another important topic talked about in this article is if single ingredient foods are required to comply with section 403, which they are since single ingredient foods can still contain protein derived from possible food allergens (milk, eggs, peanuts). This article was extremely helpful with providing me with information on the FDA and their procedures to ensure food safety.
