Autonomous navigation/robotics [1] - The way that robots and vehicles navigate the world uses things like Kalman filters[2] which use matrices as well.

Financial mathematics - Your insurance is calculated with systems of equations. Financial products like derivatives are priced with them as well.

Supply chain/logistics/manufacturing - Determining the optimal way to ship products, build out enterprises and other things uses systems of inequalities.
